Unit 1 Response Paper
Throughout the semester you will write a response paper for each unit. In each response paper, you are expected to craft an interpretive summary that not only summarizes the key components of the unit but also integrates and analyzes these components in relation to each other and the overarching theme of the unit. This exercise requires a deep engagement with the material, wherein you’ll critically evaluate the arguments presented and reflect on the various topics discussed. By integrating summary, analysis, and reflection, your response paper will not only demonstrate your understanding of the material but also your ability to think critically and engage thoughtfully with complex themes. Each Response Paper should be 3-4 pages long and demonstrate an understanding of the theme of the unit using course materials as support. Captures: Relationship to unit theme and well-being will be helpful for these papers. Your Response Paper should include the following: Summary of the unit: Start by summarizing the significant theme of the unit, ensuring that you highlight the main arguments and ideas. As you do this, focus on how these parts interconnect and contribute to a deeper understanding of the unit’s theme. Consider the relationships between different concepts and how they support or contradict each other. Cite course readings to support the summary; do not summarize each entire reading. Analysis & Integration: Your analysis should extend beyond surface-level observations, delving into the implications of the arguments. Critically assess the strengths and weaknesses of the viewpoints presented and consider the evidence that supports them. Pick a few ways that the authors arguments relate to each other, other authors read in class, class discussions or other material with which you are familiar. Elaborate on these connections. How do the readings interact with each other? Do they complement? Contradict? Challenge? How do they fit into the class as a whole? Look for common threads and create the comparisons, contrasts or connections between them. Reflection/Questions/Reactions: Reflect on your perspectives and experiences as they relate to the unit, providing a thoughtful personal insight into the discussion. What is left unsaid? How does this make you feel? What was left out of class or needs expansion? Point out what does not make sense to you, arguments that are not convincing or are not well-supported. Note your objections or agreement with the style, content, methods, etc. Support your reactions by citing course readings. Precis are due by 11:59 pm on the due date, which is one week after we complete the unit. A complete assignment should consist 3-4 pages, typed using 10-12 pt font, double-spaced, with 1-inch margins. Each prcis should include a header with the sections topic title. All readings cited must be included in a works cited/bibliography. A good prcis will incorporate readings from each week of the unit. Rubric: You can view the detailed rubric for Response Papers in Brightspace under the submission link for each paper. Each paper will be assessed along the following categories: Summary of Unit: 25% Analysis & Integration: 40% Reflection/Questions/Reactions: 25% Organization & Clarity: 5% Citation/Bibliography: 5%
The unit is food and personal health – sub topics being: Essential Nutrients and Their Roles, nutrition and food literacy, The Influence of Diet on Disease Prevention, Case Study: The Mediterranean Diet, Psychological Factors Affecting Dietary Choices, Food Preference, Social and Psychological Impact of Food Allergies, Food Allergies and Foodwork. Attached is a bibliography of the resources you can use. For the citations, Do not include every piece; only include the pieces you actually cite in the paper.

food safety
Overview
The current U.S. food safety system operates under a fragmented structure involving multiple federal agencies. In 1998, the National Academy of Sciences recommended that Congress establish a unified, central framework for managing food safety programs under a single authority.
For this assignment, you are required to write a 2- 4 page paper (excluding the title page and references) evaluating the pros and cons of consolidating food safety oversight into a single federal agency.
Your paper should critically analyze both the advantages and challenges of creating a single federal food safety agency. The following questions will guide you in writing your paper:
1. Efficiency and Coordination:
- How might a unified agency improve efficiency in food safety regulations?
- Could it lead to quicker responses to emerging food safety concerns?
2. Consolidation of Resources:
- What are the potential cost savings and improvements in resource allocation?
- How might this impact personnel, funding, and overall food safety enforcement?
3. Consistency in Standards:
- Could a single agency establish uniform food safety regulations nationwide?
- What are the potential benefits for public health and consumer confidence?
4. Challenges and Drawbacks:
- What bureaucratic hurdles or resistance to change might arise?
- How would centralization affect existing regulatory agencies and stakeholders?
5. Real-World Examples:
- Support your discussion with case studies or examples from other countries or industries.
Paper Structure
Your paper should follow a clear, logical structure, as outlined below:
Title Page
- Follow APA guidelines for formatting and style.
- Write your name, class, date, etc.
- Write a clear and concise title that reflects the main theme of your paper.
Introduction
- Start with an engaging statement or statistic to capture the readers interest.
- Provide a brief background information and explain the current U.S. food safety structure (Research the functions of the FDA, USDA, EPA, and CDC in food regulation and Briefly compare their responsibilities and jurisdictions).
- Clearly outline the thesis statement (argument) or objective of your paper.
Body Paragraphs
Each body paragraph should focus on a specific point supporting your thesis. Your analysis should:
- Support the argument with data, expert opinions, or real-world cases.
- Explain how the evidence strengthens your argument.
- Acknowledge opposing viewpoints and provide rebuttals using evidence and reasoning.
Conclusion
- Restate your thesis by summarizing your key argument in a fresh way.
- Highlight the most important findings from your analysis.
References
- References should be cited both within the text and in the reference list.
- Provide a properly formatted APA reference list citing a minimum of five sources from government agencies (e.g., FDA, USDA), journal articles, books, and trusted websites.

Color and sensory perception in food/beverages
Color – Preference Test How a food or beverage affects the senses is more important to most consumers than other criteria for food selection!!! Color can denote the ripeness, strength of dilution, and even degree to which the food was heated. Black bananas, barely yellow lemonade, and scorched macaroni send visual signals that may alter a persons choices. Sight and Color: Color can be deceiving; if the colors of two identical fruit-flavored beverages are different, people often perceive them as tasting different even though they are exactly the same. For your first assignment you will need the following materials: A lemonade flavored beverage Food coloring Plastic cups Willing participants (2-4) WITH OUT LETTING YOUR PARTICIPANTS SEE YOU 1. Divide the lemonade into four different cups 2. Apply 3 drops or as many needed to change the color of the lemonade. Do this with four different colors (red, green, blue and yellow) 3. Ask your unaware participants to try each lemonade and rate them as specified below: 4. Use one sensory card per colored lemonade: e.g. four sensory cards per participant Most Favorite Least Favorite Taste 5 4 3 2 1 Sourness 5 4 3 2 1 Astringency 5 4 3 2 1 Sweetness 5 4 3 2 1 Over acceptability 5 4 3 2 1 Two pages / double spaced, 12 font / 1 in margins. For your written assignment you should include: Explain how color/sight affects and manipulates food preferences Include at least 3 academic sources (research article, textbook, culinary school websites) Make sure to include in text citations and a reference page. Citation Style: Journal of the Academy of Nutrition and Dietetics. Provide a summary of your results including the type of sensory evaluation used in this experiment, A brief analysis of your results. What did you find in regards to food color and preference? DO NOT INCLUDE THE PROCEDURE I dont need to know how you purchased ingredients and separated out the lemonade in cups etc. Include all sensory scored cards used, not part of the 2-page minimum.Attached Files (PDF/DOCX): Concept Assignment rubrics.pdf, Color Preference – Excellent.pdf
